  1. pre-heat oven to gas 8 .. electric is 220.
  2. over a meat board…score the fat on top of the joint of pork.
  3. you do this scoring …slicing into the fat with long lines very close together and then slice opposite direction so it looks like zigzag on the fat. be careful not to slice into the meat. your butcher will score this for you if you ask..
